Abstract
The article describes the features of the production of raw meat in the natural pastures of the Lower Volga region, exposed to high aridization. A cardinal solution to the problems of the development of animal husbandry in this area can be the selection and breeding of animal breeds that are resistant to sudden climatic changes and poor pasture grass. In this regard, attention is drawn to the unique edilbaev breed of sheep, the breeding of which in the arid territories of Russia is becoming increasingly common. The assessment of growth and development of sheep of this breed is carried out, adaptation and immunobiological features of their organism are studied, quality of meat raw materials is defined.

Abstract
The article deals with the issues of increasing and improving the quality of products in the industry through the use of purebred breeding and crossing. The efficiency of interline selection and inter-plant mating, crossing of different breeds of sheep is shown. Attention is paid to selection, level of feeding, veterinary service of animals. By optimizing the feeding level of animals, selective breeding and the introduction of the recommended by scientists variants of crossings can increase the production and improve the quality of production of sheep breeding.

The article provides an overview of the results of genotyping sheep of different breeds on DNA markers of candidate genes of meat productivity and their associations with fattening and meat qualities. Identification of preferred from the point of view of selection options of such genes will significantly accelerate the process of improving existing breeds and creating new ones.

Discusses issues on making amendments in the existing standard 31777-2012 “Sheep and goats for slaughter. Abstract
Shown feed efficiency and meat productivity of purebred and chetvertichnyh on edilbay Romanov rams. Control slaughter and boning of carcasses ofsheep showed that they were preferable in animals with the blood of edilbay. Their pre-slaughter weight was 8.2 kg or 15.7 %, the mass of steamed carcass was 5.42 kg or 21.5 %, the slaughter yield was 3.12 abs. the mass of flesh-meat was 3.51 kg or 23.7 % higher compared to purebred Romanov peers.
