Козье молоко сравниваемых групп животных обладает высокими органолептическими, физико‑химическими и технологическими свойствами и соответствуют требованиям ГОСТ 32940‑2014 «Молоко козье сырое. Технические условия».</p></abstract><trans-abstract xml:lang="en"><p>The article presents data on the study of milk productivity, qualitative composition and properties of milk of goats of local and Czech breeds. Goat milk of the compared groups of animals has high organoleptic, physicochemical and technological properties and meet the requirements of GOST 32940‑2014 “Raw goat milk.
